Canada's glorious mess: hot crispy fries smothered in rich beef gravy and squeaky cheese curds that half-melt into gooey pockets. Poutine is Quebec's gift to comfort food — the contrast of crisp fry, molten curd and savory gravy is the entire, perfect point. Eat it fast, before the fries soften too much.
