A tender, juicy beef meatloaf bound with milk-soaked breadcrumbs and glazed with a tangy ketchup topping that caramelizes in the oven.

Ingredients

  • 2 lb ground beef (80/20)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 0.75 cup plain breadcrumbs
  • 0.5 cup whole milk
  • 2 whole large eggs
  • 2 tbsp Worcestershire sauce
  • 2 tbsp ketchup (for mix)
  • 1.5 tsp kosher salt
  • 0.5 tsp black pepper
  • 0.33 cup ketchup (for glaze)
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar

Instructions

  1. Preheat the oven to 350°F and line a rimmed baking sheet with foil. In a small bowl, stir the breadcrumbs into the milk and let sit 5 minutes until fully softened into a paste.
  2. In a large bowl, combine the ground beef, diced onion, garlic, eggs, Worcestershire, 2 tbsp ketchup, salt, pepper, and the soaked breadcrumb mixture. Mix gently with your hands just until evenly combined, stopping as soon as no dry streaks remain so the loaf stays tender.
  3. Transfer the mixture to the lined sheet and shape into a tight loaf about 9 by 5 inches, smoothing the top and sides so it holds together evenly.
  4. Whisk together the glaze ketchup, brown sugar, and cider vinegar, then brush half over the top and sides of the loaf.
  5. Bake for 45 minutes, then brush on the remaining glaze and continue baking 15 to 20 minutes more, until the glaze is glossy and deeply set and an instant-read thermometer in the center reads 160°F.
  6. Let the meatloaf rest 10 minutes so the juices redistribute, then slice into thick portions and serve.
