Lighter than the classic but just as messy and satisfying, these turkey sloppy joes pile sweet-and-tangy saucy meat onto toasted brioche buns for a 30-minute family dinner.
Ingredients
- 1 tbsp olive oil
- 1 small yellow onion, finely diced
- 0.5 medium green bell pepper, finely diced
- 2 cloves garlic, minced
- 1 lb ground turkey (93% lean)
- 0.5 cup tomato ketchup
- 1 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tbsp yellow mustard
- 1 tbsp brown sugar
- 0.5 cup low-sodium chicken broth
- 0.5 tsp salt
- 0.25 tsp black pepper
- 4 buns brioche hamburger buns, toasted
Instructions
- Heat the olive oil in a large skillet over medium-high until it shimmers. Add the onion and bell pepper and cook, stirring, until softened and translucent, 4 to 5 minutes. Stir in the garlic and cook until fragrant, about 30 seconds.
- Add the ground turkey and break it into fine crumbles with a wooden spoon. Cook until no pink remains, 6 to 7 minutes, letting some of the meat catch and brown on the pan.
- Stir in the tomato paste and cook for 1 minute until it darkens, then add the ketchup, Worcestershire, mustard, and brown sugar. Stir to coat the meat evenly.
- Pour in the chicken broth and season with salt and pepper. Bring to a simmer and cook, stirring occasionally, until the sauce thickens and clings to the meat with no loose liquid pooling, 8 to 10 minutes.
- Taste and adjust salt or a pinch more brown sugar if you want it sweeter. Spoon the saucy turkey generously onto the toasted brioche bun bottoms, cap with the tops, and serve while hot and glossy.
