A fresh Vietnamese-leaning noodle bowl: rice noodles tossed with sugar snap peas, spring onions and flaked hot-smoked salmon in a honey-soy-lime dressing, finished with coriander and a crunch of pretzels. Light, bright and texturally fun, it's a salad that eats like a meal. The smoky salmon against the sweet-sour dressing is the hook.
