No-bake peanut butter oat bites rolled with whey and mini chocolate chips for a chewy, protein-packed grab-and-go snack.
Ingredients
- 0.5 cup natural creamy peanut butter
- 1 cup old-fashioned rolled oats
- 0.5 cup vanilla whey protein powder
- 3 tablespoon honey
- 2 tablespoon ground flaxseed
- 3 tablespoon mini semisweet chocolate chips
- 1 teaspoon vanilla extract
- 1 tablespoon water
Instructions
- In a large bowl, stir together the peanut butter, honey, and vanilla extract until smooth and glossy, about 30 seconds.
- Add the rolled oats, whey protein powder, and ground flaxseed. Fold with a spatula until the mixture looks evenly sandy and no dry pockets remain.
- If the dough feels crumbly and won't hold together when pinched, stir in the tablespoon of water until it just clumps; then fold in the mini chocolate chips.
- Scoop level tablespoons and roll between your palms into 12 firm balls, pressing gently so they hold their shape.
- Arrange on a plate and refrigerate at least 30 minutes, until chilled and set enough to feel firm to the touch before eating or storing.
