Thai red curry, on a skewer: chicken marinated in red curry paste and coconut milk, threaded with peppers, courgette and onion, then grilled until charred and fragrant. The curry flavors caramelize on the grill for a smoky, aromatic kebab. Squeeze lime over and serve with rice — it's Thai flavor in handheld form.

Ingredients

  • 2 Chicken Breasts
  • 2 tblsp Thai Red Curry Paste
  • 2 tblsp Coconut Milk
  • 1 chopped Red Pepper
  • 1 chopped Courgettes
  • 1 cut thin wedges Red Onions
  • To serve Lime

Instructions

  1. Fire up the barbecue or heat a griddle pan to high.
  2. Tip chicken, curry paste and coconut milk into a bowl, then mix well until the chicken is evenly coated.
  3. Thread vegetables and chicken onto skewers.
  4. Cook the skewers on the barbecue or griddle for 5-8 mins, turning every so often, until the chicken is cooked through and charred. Serve with herby rice, salad and a lime half to squeeze over.
