Crisp celery boats piled with creamy, tangy buffalo chicken and a sprinkle of blue cheese deliver all the flavor of game-day wings in a fresh, high-protein snack.
Ingredients
- 12 oz cooked shredded chicken breast
- 4 oz cream cheese, softened
- 0.25 cup buffalo hot sauce
- 8 whole celery stalks, trimmed
- 0.25 cup blue cheese crumbles
- 2 whole green onions, thinly sliced
- 0.25 tsp kosher salt
Instructions
- In a medium bowl, stir the softened cream cheese with a spatula until it loosens and turns spreadable, with no firm lumps remaining.
- Add the buffalo hot sauce and salt and stir until the mixture turns an even orange and smells sharp and tangy throughout.
- Fold in the shredded chicken until every strand is coated in the creamy buffalo sauce and the filling holds together when pressed with the spatula.
- Cut each celery stalk crosswise into 3-inch pieces, creating sturdy boats with the natural groove facing up to cradle the filling.
- Spoon a heaping mound of buffalo chicken into each celery boat, pressing gently so it stays put, then scatter the blue cheese crumbles and green onions over the top. Serve chilled or at room temperature.
