Slices of deli turkey spread with herbed cream cheese and wrapped around cheddar and crisp vegetable strips make a no-cook, grab-and-go snack packed with lean protein.
Ingredients
- 12 oz sliced deli turkey breast
- 3 oz cream cheese, softened
- 4 oz cheddar cheese, cut into thin sticks
- 0.5 whole cucumber, cut into matchsticks
- 0.5 whole red bell pepper, cut into thin strips
- 1 tsp dijon mustard
- 1 tbsp fresh dill, minced
Instructions
- In a small bowl, stir the softened cream cheese with the dijon mustard and minced dill until the mixture is smooth, evenly green-flecked, and easy to spread.
- Lay the turkey slices flat on a cutting board and spread a thin, even layer of the herbed cream cheese across each one, all the way to the edges so the roll seals tightly.
- Lay a stick of cheddar and a few cucumber and bell pepper strips along one short edge of each turkey slice, keeping the bundle compact.
- Roll each slice up snugly around the filling, pressing the seam against the cream cheese so it holds its shape, then set seam-side down to rest for a minute.
- Slice each roll-up crosswise into 1-inch pinwheels or leave whole, and serve chilled; secure with a toothpick if the pinwheels start to unravel.
