Layers of thick Greek yogurt whipped with vanilla protein, juicy mixed berries, and crunchy toasted almond granola for a no-cook breakfast that eats like dessert.
Ingredients
- 2 cups nonfat plain Greek yogurt
- 0.33 cup vanilla whey protein powder
- 1 tbsp honey
- 1.5 cups mixed fresh berries
- 0.5 cup gluten-free almond granola
- 2 tbsp sliced almonds, toasted
- 0.5 tsp vanilla extract
- 0.5 tsp lemon zest
Instructions
- In a bowl, stir together the Greek yogurt, protein powder, honey, and vanilla extract until the powder fully dissolves and the mixture is thick, smooth, and glossy.
- Gently toss the mixed berries with the lemon zest in a small bowl, lightly crushing a few with the back of a spoon to release their juice.
- Spoon a half-inch layer of the yogurt mixture into the bottom of two glasses, dividing it evenly, then top each with a generous layer of the juicy berries.
- Sprinkle an even layer of almond granola over the berries until it forms a crunchy crust, then repeat the yogurt and berry layers until the glasses are full, ending with a final dollop of yogurt.
- Finish each parfait with a scatter of toasted sliced almonds and a few reserved berries, and serve within 5 minutes so the granola stays crisp and crunchy rather than turning soft.
