Creamy stovetop oats simmered with milk and vanilla protein, swirled with natural peanut butter and caramelized banana for a stick-to-your-ribs high-protein bowl.
Ingredients
- 1 cup old-fashioned rolled oats
- 1.5 cups low-fat milk
- 0.5 cup water
- 0.33 cup vanilla whey protein powder
- 2 tbsp natural peanut butter
- 1 medium ripe banana, sliced
- 1 tbsp honey
- 0.5 tsp ground cinnamon
- 0.125 tsp kosher salt
Instructions
- In a saucepan, bring the milk, water, cinnamon, and salt to a gentle simmer over medium heat, watching closely so the milk does not boil over.
- Stir in the rolled oats, reduce the heat to medium-low, and cook, stirring occasionally, until the oats are tender and the mixture thickens to a creamy porridge, about 8 minutes.
- Remove the saucepan from the heat and let it cool for 1 minute, then whisk in the protein powder a little at a time until it dissolves smoothly without clumping.
- Stir in the peanut butter and honey until they melt into the oats and the bowl turns glossy and golden.
- Fold in half the banana slices, divide the oatmeal between two bowls, and top with the remaining banana and a light dusting of cinnamon before serving warm.
