A hearty make-ahead bake of browned turkey sausage, fluffy eggs, and melted cheddar that feeds a crowd and reheats beautifully through a busy week.
Ingredients
- 1 lb lean ground turkey sausage
- 12 whole large eggs
- 1 cup whole milk
- 1 cup shredded sharp cheddar cheese
- 1 whole red bell pepper, diced
- 0.5 whole yellow onion, diced
- 1 tbsp olive oil
- 1 tsp kosher salt
- 0.5 tsp black pepper
Instructions
- Heat the oven to 350°F and grease a 9-by-13-inch baking dish. Warm the olive oil in a large skillet over medium-high heat until it shimmers.
- Add the turkey sausage and break it into small crumbles, cooking for 6 to 8 minutes until no pink remains and the bits are lightly browned. Stir in the onion and bell pepper and cook 4 minutes more, until the onion turns translucent and smells sweet.
- Spread the sausage-vegetable mixture evenly across the bottom of the baking dish and scatter half the cheddar over the top.
- In a large bowl, whisk the eggs, milk, salt, and black pepper for about 30 seconds, until the mixture is uniformly pale yellow and slightly frothy, then pour it evenly over the sausage layer.
- Sprinkle the remaining cheddar on top and bake for 35 to 40 minutes, until the center is set and a knife inserted off-center comes out clean.
- Let the casserole rest for 10 minutes so it firms up and slices cleanly, then cut into 8 squares and serve warm.
