Quick-seared salmon glazed in a sticky-sweet honey, garlic, and soy sauce that reduces to a glossy lacquer and caramelizes against the fish in minutes.
Ingredients
- 4 fillets skin-on salmon fillets
- 3 tbsp honey
- 3 tbsp soy sauce
- 4 cloves garlic cloves, minced
- 1 tbsp fresh lemon juice
- 1 tbsp olive oil
- 0.25 tsp red pepper flakes
- 0.75 tsp kosher salt
- 0.5 tsp black pepper
- 1 stalk green onion, sliced
Instructions
- Pat the salmon dry and season both sides with the salt and black pepper, then whisk the honey, soy sauce, lemon juice, and red pepper flakes together in a small bowl until smooth.
- Heat the olive oil in a large skillet over medium-high heat until it shimmers and just begins to ripple across the surface.
- Lay the fillets in flesh-side down and sear undisturbed for 3-4 minutes, until the bottom is deep golden and releases from the pan without tearing, then flip them.
- Cook the second side 2-3 minutes, then scatter the garlic into the pan around the fish and stir for about 30 seconds until it smells fragrant but hasn't browned.
- Pour the honey-soy mixture over the salmon and let it bubble and reduce for 2-3 minutes, until it thickens into a glossy glaze that coats the back of a spoon.
- Tilt the pan and spoon the glaze over the fillets repeatedly for 1 minute, until the tops are shiny and lacquered and the thickest part flakes with gentle pressure at 125-130°F.
- Pull the pan off the heat, rest the salmon 2 minutes, then spoon the remaining glaze over and finish with sliced green onion.
